Fresh Whole Silver Pomfret Fish

Whole silver pomfret with a bright, mirror-silver skin and a compact, flat body. The flesh is white, tender and comes away from the bone in clean flakes.

Three fish to the plate, uniformly sized so they cook evenly. Steam whole with ginger and spring onion, or pan-fry until the skin blisters.
