Fresh Steamed Green Mussels in Shell

Green mussels steamed open on the half shell, each one plump with a deep orange-gold flesh and a glossy black-blue shell.

Sweet and briny, with the liquor still in the shell. Warm through in white wine, garlic and butter, or serve chilled with a squeeze of lemon.
